Ingredients

– 1 medium head of green cabbage, chopped
– 2 chicken tenderloins, diced
– 1 large onion, chopped
– 3 cloves garlic, minced
– 2 carrots, sliced
– 3 celery stalks, sliced
– 6 cups chicken broth
– 1 can (14.5 oz) diced tomatoes
– 1 tablespoon olive oil
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– Salt and pepper to taste
– Fresh parsley for garnish


Instructions

1. In a large pot, heat olive oil over medium heat. Add the onions and garlic, sauté until the onions are translucent.
2. Add the diced chicken tenderloins to the pot and cook until browned on all sides.
3. Stir in the carrots and celery, cooking for an additional 5 minutes.
4. Add the chopped cabbage to the pot and mix well.
5. Pour in the chicken broth and diced tomatoes, stirring to combine.
6. Season the soup with thyme, oregano, salt, and pepper.
7. Bring to a boil, then reduce heat to a simmer. Cover and let cook for 30 minutes, or until the vegetables are tender.
8. Serve hot, garnished with fresh parsley.
