Warm up with a bowl of this delicious roasted tomato and basil soup. Perfectly comforting, it’s full of fresh flavors and easy to make!
Ingredients
– 8 ripe tomatoes, halved
– 1 red onion, chopped
– 4 cloves garlic, peeled
– 2 tablespoons olive oil
– Salt and pepper to taste
– 4 cups vegetable broth
– 1 cup fresh basil leaves
– 1 tablespoon balsamic vinegar
Instructions
1. Preheat your oven to 400°F (200°C).
2. Place the tomato halves, chopped onion, and garlic cloves on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
3. Roast in the oven for 25-30 minutes until the tomatoes are caramelized.
4. Transfer the roasted vegetables to a large pot. Add the vegetable broth and bring to a simmer.
5. Cook for 10 minutes, then add the fresh basil leaves and balsamic vinegar.
6. Use an immersion blender to puree the soup until smooth. Adjust seasoning with salt and pepper as needed.
7. Serve hot and garnish with extra basil leaves if desired.
