– 2 tablespoons olive oil
– 1 pound chicken tenderloin, diced
– 1 large onion, chopped
– 3 cloves garlic, minced
– 2 carrots, sliced
– 2 celery stalks, chopped
– 1 zucchini, diced
– 1 can (14.5 ounces) diced tomatoes
– 6 cups chicken broth
– 1 teaspoon dried thyme
– 1 teaspoon dried basil
– Salt and pepper to taste
– 1 cup fresh spinach
– 1 tablespoon lemon juice
– 2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil in a large pot over medium heat. Add chicken tenderloin and cook until browned.
2. Add the onion and garlic, cooking until the onion becomes translucent.
3. Stir in the carrots, celery, and zucchini, cooking for another 5 minutes.
4. Pour in the diced tomatoes and chicken broth, bringing the mixture to a boil.
5. Season with thyme, basil, salt, and pepper. Reduce heat and let the soup simmer for 20 minutes.
