Ingredients
– 4 large potatoes, diced
– Water, enough to cover the potatoes
– 1 cup diced onions
– 2 cups milk
– 3 chicken bouillon cubes
– 2 cups cooked chicken tenderloin, diced
– 2 tablespoons flour
– 2 tablespoons dried parsley
– 1/2 teaspoon garlic powder
– Salt and pepper, to taste
Instructions
1. Place the diced potatoes and onions in a large pot. Cover with water and bring to a boil over medium-high heat.
2. Cook the potatoes and onions until the potatoes are fork-tender, about 10-15 minutes. Drain the water and return the potatoes and onions to the pot.
3. Add in the milk and chicken bouillon cubes, stirring until the cubes are dissolved.
4. In a small bowl, whisk together the flour with a few tablespoons of water to create a slurry. Stir the slurry into the soup to thicken.
5. Add the cooked chicken tenderloin, dried parsley, and garlic powder. Stir to combine and heat through.
6. Season the soup with salt and pepper to taste. Simmer for an additional 5 minutes, allowing the flavors to meld together.
7. Serve hot, garnished with additional parsley if desired.
