Ingredients

– 1 lb chicken tenderloins, chopped
– 2 large sweet potatoes, peeled and cubed
– 1 onion, chopped
– 2 cloves garlic, minced
– 4 cups chicken broth
– 1 cup heavy cream
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
– 2 tablespoons olive oil
– Fresh parsley, chopped (for garnish)


Instructions

1. Heat olive oil in a skillet over medium heat. Add chopped chicken tenderloins, season with salt and pepper, and brown on all sides.
2. Transfer the browned chicken to your slow cooker.
3. Add sweet potatoes, onion, garlic, thyme, and rosemary. Pour in the chicken broth.
4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until sweet potatoes are tender and chicken is fully cooked.
5. Stir in the heavy cream during the last 30 minutes of cooking. Adjust seasoning with additional salt and pepper if needed.
6. Serve in bowls, garnished with fresh parsley.
