Ingredients

– 1 tablespoon olive oil
– 1 pound ground chicken tenderloin
– 1 onion, diced
– 2 cloves garlic, minced
– 1 small head of cabbage, chopped
– 2 carrots, diced
– 1 can (15 ounces) diced tomatoes
– 4 cups chicken broth
– 1 cup white rice, uncooked
– 2 tablespoons tomato paste
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley for garnish


Instructions

1. Heat olive oil in a large pot over medium heat. Add the ground chicken tenderloin and cook until browned.
2. Add the diced onion and minced garlic, cooking until the onion is translucent.
3. Stir in the chopped cabbage and diced carrots, cooking for another 5 minutes.
4. Add the diced tomatoes, chicken broth, rice, tomato paste, dried thyme, salt, and pepper.
5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the rice is tender.
6. Adjust seasonings if necessary. Serve hot, garnished with fresh parsley.
