Ingredients

– 4 chicken tenderloins
– 1 egg, beaten
– 1 cup breadcrumbs
– 1 tablespoon Italian seasoning
– 4 large russet potatoes, diced
– 3 tablespoons olive oil
– 1/2 cup grated parmesan cheese
– 4 cloves garlic, minced
– Salt and pepper to taste


Instructions

1. Preheat your oven to 425F (220C).
2. In a shallow dish, combine breadcrumbs and Italian seasoning. Dip each chicken tenderloin into the beaten egg and then coat in the breadcrumb mixture.
3. Place the coated chicken on one side of a baking sheet.
4. In a large bowl, toss the diced potatoes with olive oil, garlic, salt, and pepper. Spread the potatoes in a single layer on the other side of the baking sheet.
5. Roast in the preheated oven for 20 minutes. Flip the potatoes and chicken halfway through for even cooking.
6. Sprinkle grated parmesan cheese over the potatoes and return to the oven for an additional 5 minutes until the cheese is melted and golden.
7. Serve the herb-crusted chicken tenderloins with the parmesan potatoes, garnished with fresh parsley if desired.
