Ingredients
16 oz (1 lb) cremini mushrooms, sliced
8 slices sourdough bread
8 slices sharp cheddar cheese
4 tbsp olive oil, plus more for brushing
2 cloves garlic, minced
1 tsp fresh thyme leaves
Salt and pepper to taste
For the Herb Aioli:
1/2 cup mayonnaise
1 tbsp lemon juice
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
Start by preparing the herb aioli. In a small bowl, combine mayonnaise, lemon juice, parsley, basil, garlic powder, salt, and pepper. Mix well and adjust seasoning to taste, then set aside.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced mushrooms and garlic, then season with salt, pepper, and thyme. Cook until mushrooms are browned and crispy, about 10 minutes. Transfer to a plate.
Brush one side of each bread slice with olive oil. To assemble, spread the herb aioli on the unbrushed side of 4 slices. Layer a slice of cheddar, a generous portion of crispy mushrooms, another slice of cheddar, and top with another bread slice, olive oil side up.
