Ingredients
– 1 pound ground turkey
– 1/3 cup oatmeal
– 1/3 cup Parmesan cheese
– 1 egg
– 1/2 cup ketchup, divided
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– 1 teaspoon Worcestershire sauce
– 1/3 cup finely chopped onions
– 1/3 cup finely chopped mushrooms
– 1/3 cup finely chopped zucchini
– 1/3 cup finely chopped carrots
– A handful of spinach, finely chopped
Instructions
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl, combine turkey, oatmeal, Parmesan cheese, egg, 1/4 cup of ketchup, garlic powder, salt, pepper, and Worcestershire sauce. Mix well.
3. Add onions, mushrooms, zucchini, carrots, and spinach to the mixture, combining thoroughly.
4. Press the mixture into muffin pan cups, filling each to the top. This amount should make approximately 8-10 muffins.
5. Top each muffin with a dollop of the remaining ketchup.
6. Bake in the oven for 15-17 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
7. Serve warm, two muffins per person, and enjoy!
