1 pound large shrimp, peeled and deveined
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
Juice of 1 lemon
1/4 cup white wine (optional)
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley

For the Herb Infused Rice:
1 cup long-grain white rice
2 cups chicken broth
2 cloves garlic, minced
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh thyme
Salt and pepper, to taste


Instructions

1. Prepare the Shrimp Scampi:
Season the shrimp with salt and pepper.
In a large skillet over medium-high heat, heat the olive oil. Add the shrimp and cook for about 2 minutes on each side until pink and opaque.
Remove the shrimp and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in chicken broth, lemon juice, and white wine if using, stirring to deglaze the pan.
Simmer for 3-4 minutes to reduce slightly.
Stir in the butter until melted and smooth.
Return the shrimp to the skillet, coating them well in the sauce.
Sprinkle chopped parsley over the shrimp before serving.

2. Prepare the Herb Infused Rice:
In a medium saucepan, combine rice, chicken broth, and minced garlic. Bring to a boil, then reduce the heat to low.
Cover and simmer for 15-20 minutes until the rice is tender and the broth is absorbed.
Remove from heat and stir in chopped basil and thyme.
Season with salt and pepper to taste.

3. Assemble the Dish:
Portion the herb-infused rice onto plates or bowls.
Top with shrimp scampi, drizzling some sauce over the shrimp and rice.
Garnish with additional parsley, if desired.

Serve immediately for a refreshingly aromatic and satisfying meal!
