Ingredients
– 2 cups whole wheat flour
– 1 teaspoon baking powder
– 1/2 teaspoon ground cinnamon
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup vegetable oil
– 1/2 cup pure maple syrup
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup finely grated carrots
– 1 apple, peeled and grated
– Zest of 1 orange
– 1/2 cup chopped walnuts
– 1/3 cup raisins
Instructions
1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the tin.
2. In a large mixing bowl, whisk together the whole wheat flour, baking powder, cinnamon, baking soda, and salt.
3. In another bowl, combine the vegetable oil, pure maple syrup, eggs, and vanilla extract. Stir until well mixed.
4. Gradually add the wet mixture to the dry ingredients, stirring just until combined.
5. Fold in the grated carrots, grated apple, orange zest, walnuts, and raisins.
6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
7. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
