For the Lo Mein:
8 oz lo mein noodles or spaghetti
2 tablespoons vegetable oil
1 onion, thinly sliced
2 cloves garlic, minced
1 cup sliced carrots
1 cup sliced bell peppers (red, green, or yellow)
1 cup broccoli florets
1 cup snow peas
1/4 cup soy sauce
2 tablespoons teriyaki sauce
1 teaspoon sesame oil
1/4 cup chicken broth
1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)
Green onions, chopped for garnish
Sesame seeds (optional, for garnish)


Instructions

Marinate the Chicken:
In a bowl, combine the chicken tenderloin strips with soy sauce and cornstarch. Allow the mixture to marinate for 10-15 minutes.

Cook the Noodles:
Prepare the lo mein noodles or spaghetti according to the package instructions. Drain and set aside.

Stir-fry the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through, approximately 4-5 minutes. Remove the chicken and set it aside.

Cook the Vegetables:
In the same skillet, heat the remaining tablespoon of oil. Add the onion, garlic, carrots, bell peppers, broccoli, and snow peas. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.

Combine Chicken and Vegetables:
Return the cooked chicken to the skillet, stirring to combine with the vegetables.

Make the Sauce:
In a small bowl, mix the soy sauce, teriyaki sauce, sesame oil, and chicken broth. Pour the sauce over the chicken and vegetables, stirring to coat.

Thicken the Sauce:
Stir in the cornstarch slurry and cook for 1-2 minutes, stirring constantly, until the sauce thickens.

Add Noodles:
Add the cooked noodles to the skillet, tossing to coat everything in the sauce.

Garnish and Serve:
Garnish with chopped green onions and sesame seeds if desired. Serve immediately and enjoy!
