White Bean and Carrot Delight Soup

Last night, I experimented with a new version of my comforting soup recipe, the White Bean and Carrot Delight. As soon as the first mouthful was tasted by my family, the warmth and rich flavors filled the room with smiles. This dish is perfect for a cozy evening together, bringing joy with every spoonful.


Ingredients

– 1 can of Great Northern beans
– 2 carrots, diced
– 1 onion, chopped
– 2 cloves of garlic, minced
– 4 cups of vegetable broth
– 1 tsp dried thyme
– 1 bay leaf
– Salt and pepper to taste
– Olive oil for sautéing


Instructions

1. In a large pot, heat a tablespoon of olive oil over medium heat.
2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
3. Stir in the diced carrots and cook for an additional 3-4 minutes.
4. Pour in the vegetable broth, then add the can of Great Northern beans, along with the dried thyme and bay leaf.
5. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, until the carrots are tender.
6. Season with salt and pepper to taste, removing the bay leaf before serving.
7. Ladle the soup into bowls and enjoy the comforting taste.
