– 1 pound ground turkey tenderloin
– 1 tablespoon olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 4 cups chicken broth
– 1 can (14.5 oz) diced tomatoes, undrained
– 1 tablespoon tomato paste
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– 1 cup cooked rice
– Fresh parsley, chopped (optional, for garnish)


Instructions

1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
2. Add the ground turkey tenderloin to the pot. Cook and stir until the turkey is browned and fully cooked.
3. Stir in the chopped red and green bell peppers, allowing them to cook for an additional 5 minutes until they begin to soften.
4. Pour in the chicken broth, diced tomatoes (with juice), and tomato paste. Stir to combine all the ingredients.
5. Add the dried oregano and dried basil, and season with salt and pepper to taste. Bring the mixture to a simmer.
6. Let the soup simmer for 20 minutes, allowing the flavors to meld together beautifully.
7. Stir in the cooked rice and continue to simmer for another 5 minutes.
8. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
