Ingredients
1 lb chicken tenderloin, cut into cubes
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
1 cup wild rice
4 cups chicken broth
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
1. In a skillet, heat olive oil over medium heat. Add the chicken tenderloin cubes and cook until they are browned on all sides. Transfer the chicken to the slow cooker.
2. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Add the sautéed onions and garlic to the slow cooker.
4. Add the diced carrots, celery, and wild rice to the slow cooker.
5. Pour the chicken broth into the slow cooker and stir in the dried thyme. Season with salt and pepper to taste.
6. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the wild rice is tender.
7. Before serving, taste and adjust seasoning if needed. Enjoy!
