Ingredients
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 can (14 oz) diced tomatoes
– 4 cups vegetable broth
– 2 cans (15 oz each) white beans, drained and rinsed
– 2 cups chopped kale
– Salt and pepper to taste
– Parmesan cheese, for serving (optional)
– Fresh parsley, chopped, for garnish
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
2. Stir in the minced garlic, diced carrots, and celery. Cook for an additional 5 minutes until the vegetables are starting to soften.
3. Add the dried thyme and rosemary to the pot, stirring to combine with the vegetables.
4. Pour in the diced tomatoes and vegetable broth, bringing the mixture to a simmer.
5. Add the white beans to the soup, simmering for 15 minutes to allow flavors to meld.
6. Stir in the chopped kale and cook for another 5 minutes until the kale is tender.
7. Season the soup with salt and pepper to taste.
