Ingredients
– 1 pound chicken tenderloin, cubed
– 8 average potatoes, peeled and cubed
– 2 cups fresh spinach, roughly chopped
– 2 cups chicken broth
– 2 sticks celery, sliced
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium heat. Add the cubed chicken tenderloin and cook until browned on all sides. Remove chicken from the pot and set aside.
2. In the same pot, add the onion, celery, and garlic. Sauté for about 5 minutes until the vegetables are soft and fragrant.
3. Add the potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and let it simmer for about 15 minutes until the potatoes are tender.
4. Return the cooked chicken to the pot and add the chopped spinach. Stir well and let it cook for an additional 5 minutes or until the spinach has wilted.
5. Season the soup with salt and pepper to taste. Serve hot and enjoy.
