Ingredients

– 1 pound chicken tenderloin, diced
– 1 tablespoon olive oil
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 3 tablespoons all-purpose flour
– 4 cups chicken broth
– 2 cups diced pickled gherkins
– 1 cup sour cream
– 2 teaspoons dried dill
– 2 bay leaves
– Salt and pepper to taste
– Fresh dill and gherkin slices, for garnish (optional)


Instructions

1. Heat olive oil in a large pot over medium heat. Add the chicken tenderloin and sauté until browned. Remove from the pot and set aside.
2. In the same pot, add the onion and garlic, sautéing until translucent.
3. Sprinkle the flour over the sautéed onions and garlic. Stir constantly for about 2 minutes to form a roux.
4. Gradually whisk in the chicken broth, ensuring there are no lumps.
5. Stir in the pickled gherkins, cooked chicken, sour cream, dried dill, and bay leaves. Season with salt and pepper.
6. Let the soup simmer for about 20-25 minutes, allowing the flavors to meld together. Remove bay leaves before serving.
7. Serve hot, garnished with fresh dill and gherkin slices if desired.
