Ingredients
– 1 cup dried lentils, rinsed
– 2 tablespoons olive oil
– 1 pound chicken tenderloin, diced
– 1 large onion, diced
– 2 carrots, sliced
– 2 celery stalks, sliced
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1/2 teaspoon red pepper flakes
– 1 can (14 oz) diced tomatoes with juice
– 4 cups chicken broth
– 2 cups water
– Salt and pepper to taste
– 1 tablespoon lemon juice
– Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add the chicken tenderloin pieces and cook until browned, about 5-7 minutes. Remove and set aside.
2. In the same pot, add onion, carrots, and celery. Saut until vegetables are tender, about 5 minutes.
3. Stir in garlic, oregano, basil, and red pepper flakes. Cook for another minute until fragrant.
4. Add the diced tomatoes, chicken broth, water, and lentils to the pot. Stir well to combine.
5. Bring the soup to a boil, then reduce heat to low. Cover and let simmer for about 25-30 minutes, until lentils are tender.
6. Return the cooked chicken to the pot and season with salt and pepper. Simmer for an additional 5 minutes.
