Ingredients

– 1 tablespoon olive oil
– 1 pound chicken tenderloin, cut into bite-sized pieces
– 1 onion, chopped
– 3 cloves garlic, minced
– 3 carrots, sliced
– 2 stalks celery, sliced
– 1 teaspoon dried Italian herbs
– 6 cups chicken broth
– 1 can (14.5 ounces) diced tomatoes
– 1 package (9 ounces) cheese tortellini
– 2 cups fresh spinach
– 1 cup heavy cream
– Salt and pepper to taste
– Grated Parmesan cheese, for garnish
– Fresh basil leaves, for garnish


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add the chicken tenderloin and cook until browned on all sides. Remove the chicken and set aside.
2. In the same pot, add onion, garlic, carrots, and celery. Saut for 5 minutes or until the vegetables are softened.
3. Stir in the dried Italian herbs and cook for an additional minute.
4. Pour in the chicken broth and diced tomatoes. Bring to a boil.
5. Return the browned chicken to the pot and reduce the heat to simmer. Cook for 10 minutes, allowing the flavors to meld.
6. Add the cheese tortellini and spinach to the pot and cook according to the tortellini package instructions until tender.
7. Stir in the heavy cream and heat through. Season with salt and pepper to taste.
8. Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.
