– 1/2 bunch green onions, thinly sliced
– 1 red bell pepper, julienned
– 1/2 teaspoon sea salt
– 1.5 lb bag frozen dumpling potstickers or mini potstickers
– 2 cups fresh bok choy, chopped
– 1 teaspoon lime juice
– 1 teaspoon poppy seeds, optional


Instructions

1. Heat coconut oil in a soup pot over medium heat. Add ginger and garlic, sautéing until fragrant, about 3 minutes.
2. Pour in the vegetable broth, coconut milk, and soy sauce. Add green onions, red bell pepper, and sea salt. Bring the mixture to a gentle simmer.
3. Add the frozen dumpling potstickers to the soup and allow it to return to a simmer. Cook for another 4 minutes.
4. Stir in the chopped bok choy and lime juice, letting the greens wilt slightly.
5. Remove the soup from heat. Garnish with poppy seeds and additional green onions if desired.
