Ingredients

– 1 pound chicken tenderloin, trimmed and cut into 1-inch pieces
– 1 1/2 cups carrots, thinly sliced
– 1 1/2 cups celery, thinly sliced
– 2/3 cup onion, chopped
– 10-12 mushrooms, sliced
– 2 tablespoons chicken base (different from chicken broth, it makes chicken broth)
– 8-10 cups water
– 1 or 2 large bay leaves
– 1 cup uncooked quinoa
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 1 tablespoon garlic


Instructions

1. Brown the chicken in a skillet until golden, stirring frequently.
2. Remove the chicken from the pan and place it in a crockpot.
3. Add carrots, celery, onion, mushrooms, chicken base, water, garlic, and bay leaf to the crockpot.
4. Cook on high heat for 2 hours.
5. Add quinoa, lower the heat to low, and cook until vegetables and chicken are tender.
6. Stir in salt and pepper.
7. Remove and discard the bay leaf before serving.
