– 1 pound smoked kielbasa, sliced
– 6 medium sweet potatoes, peeled and cubed
– 2 cups frozen corn
– 2 cups chicken broth
– 3 celery sticks, sliced
– Juice of 1 lime
– Salt and pepper, to taste
– Fresh cilantro, for garnish


Instructions

1. In a large pot over medium heat, brown the sliced kielbasa until slightly crispy. Remove and set aside.
2. In the same pot, add the sweet potatoes and sliced celery, stirring occasionally until the vegetables start to soften.
3. Pour in the chicken broth and bring the mixture to a simmer.
4. Add the frozen corn and the browned kielbasa back to the pot. Stir well to combine.
5. Season the soup with salt and pepper to taste. Let it simmer for about 20 minutes or until the sweet potatoes are tender.
