Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 cans (14 oz each) diced tomatoes
– 2 cups vegetable broth
– 1 cup heavy cream
– Salt and pepper to taste
– 4 slices of bread
– 2 tablespoons butter, softened
– 1 teaspoon garlic powder
– 1 tablespoon mixed dried herbs (such as thyme and oregano)
– 1 cup shredded cheese (cheddar or mozzarella)
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking for about 5 minutes until the onion becomes translucent.
2. Add the diced tomatoes with their juice and vegetable broth. Bring to a simmer and let it cook for 15 minutes, stirring occasionally.
3. Using an immersion blender, puree the soup until smooth and creamy. Stir in the heavy cream and season with salt and pepper. Continue to simmer on low heat.
4. For the toast, preheat your oven’s broiler. Spread softened butter on each slice of bread. Sprinkle with garlic powder and mixed herbs. Top with shredded cheese.
5. Place the bread on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes. Watch closely to prevent burning.
