Ingredients
– 1 pound fresh ground beef
– 1 can black beans, drained (15 ounces)
– 1 can chickpeas, drained (15 ounces)
– 1 large sweet potato, peeled and diced
– 1 can diced tomatoes (29 ounces)
– 1 cup corn kernels
– 1 medium onion, chopped
– 1 cup diced green bell pepper
– 2 cloves garlic, minced
– 2 tablespoons tomato paste
– 3 tablespoons chili powder
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 1 teaspoon salt
– 1/2 teaspoon ground black pepper
– 1/2 teaspoon dried oregano
– 2 cups vegetable broth
Instructions
1. In a large skillet, brown the ground beef over medium heat. Once cooked, drain off any excess fat.
2. In a 6-quart pot, combine the browned beef, black beans, chickpeas, sweet potato, diced tomatoes, corn, onion, bell pepper, and garlic.
3. Stir in the tomato paste, chili powder, cumin, smoked paprika, salt, pepper, and oregano.
4. Pour in the vegetable broth and bring the mixture to a boil.
5. Reduce the heat to low, cover the pot, and let the chili simmer for 1 to 1 1/2 hours. Stir every 15 minutes to ensure even cooking.
