Ingredients
– 1 pound ground turkey, lean
– 1 tablespoon olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– 1 teaspoon ground cumin
– 1 teaspoon dried oregano
– 1 cup quinoa, rinsed
– 4 cups chicken or vegetable broth
– 1 can (14.5 oz) diced tomatoes
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– Salt and pepper to taste
– 2 tablespoons fresh parsley, chopped (optional)
– 1 tablespoon lime juice (optional)
Instructions
1. In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
2. Stir in the minced garlic, smoked paprika, cumin, and oregano, cooking for another minute until fragrant.
3. Add the ground turkey to the pot, breaking it up with a spoon as it browns. Cook until no longer pink.
4. Rinse the quinoa under cold water and add it to the pot along with the chicken or vegetable broth and diced tomatoes. Bring the mixture to a boil.
5. Reduce the heat to a simmer and add the chopped red and green bell peppers. Cover the pot and cook for 20 minutes, or until the quinoa is fully cooked and the flavors have melded together.
6. Season the soup with salt and pepper to taste. Stir in fresh parsley and lime juice if using, to enhance the flavor.
7. Serve hot, garnished with additional parsley if desired.
