Ingredients
– 1 pound chicken tenderloin, cubed
– 5 medium-sized potatoes, peeled and diced
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 cup heavy cream
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– Salt and pepper to taste
– 2 tablespoons olive oil
– 2 cups shredded cheddar cheese
– Chopped parsley for garnish (optional)
Instructions
1. Heat the olive oil in a pan over medium heat and add the chicken tenderloin. Cook until lightly browned on all sides.
2. Transfer the browned tenderloin to the crockpot, and add the diced potatoes, onion, and garlic.
3. Pour in the chicken broth. Add the thyme, oregano, salt, and pepper. Stir to combine.
4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are tender.
5. Once done, use a potato masher to mash some of the potatoes and thicken the soup slightly.
6. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
7. Serve hot, garnished with chopped parsley if desired.
