Ingredients
– 1 1/2 pounds boneless, skinless chicken tenderloins
– Kosher salt and freshly ground black pepper, to taste
– 8 cups chicken stock
– 4 cloves garlic, minced
– 1 onion, diced
– 3 carrots, peeled and diced
– 3 stalks celery, diced
– 1/2 teaspoon dried thyme
– 1/2 teaspoon dried rosemary
– 2 bay leaves
– 8 ounces spaghetti, broken into thirds
– 1 cup heavy cream
– Juice of 1 lemon
– 2 tablespoons chopped fresh parsley
Instructions
1. Season the chicken tenderloins with salt and pepper, to taste. Place them into a 6-quart slow cooker.
2. Stir in chicken stock, garlic, onion, carrots, celery, thyme, rosemary, and bay leaves; season with additional salt and pepper, if needed. Cover and cook on low heat for 6-8 hours.
3. Remove the chicken from the slow cooker and shred it using two forks.
4. Add the shredded chicken back into the slow cooker along with the spaghetti. Stir in the heavy cream.
5. Cover and cook on low heat for an additional 30-40 minutes, or until the pasta is tender and the mixture is creamy.
6. Stir in the lemon juice and parsley just before serving.
7. Serve immediately and enjoy every comforting bite.
