Ingredients
– 2 tablespoons olive oil
– 1 pound chicken tenderloin, cut into bite-sized pieces
– Salt and pepper to taste
– 1 large onion, chopped
– 3 garlic cloves, minced
– 4 cups chicken broth
– 1 medium head of cabbage, cored and chopped
– 2 carrots, sliced
– 2 celery stalks, sliced
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– 1 bay leaf
– Juice of 1 lemon
– Fresh parsley for garnish
Instructions
1. In a large pot, heat the olive oil over medium heat. Season the chicken tenderloin pieces with salt and pepper.
2. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove from the pot and set aside.
3. In the same pot, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
4. Pour in the chicken broth and bring it to a simmer. Add the chopped cabbage, sliced carrots, and celery.
5. Stir in the thyme, oregano, and bay leaf. Return the browned chicken to the pot.
6. Cover and let the soup simmer for 25-30 minutes, or until the vegetables are tender and the chicken is cooked through.
7. Remove the bay leaf, add lemon juice, and stir well. Adjust seasoning with more salt and pepper if needed.
