Ingredients
– 1 cup packed light brown sugar
– 1 cup all-purpose flour
– 2 cups chopped pecans
– 2/3 cup butter, softened
– 2 eggs, beaten
– 1/4 cup pure maple syrup
Instructions
1. Preheat your oven to 350 degrees F. Generously grease mini or regular muffin cups to prevent sticking.
2. In a medium bowl, combine the brown sugar, flour, and pecans, stirring until well mixed.
3. In another bowl, beat together the softened butter, eggs, and maple syrup until smooth.
4. Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.
5. Fill each muffin cup about 2/3 full with the batter.
6. Bake for 12-13 minutes if using mini muffin cups, or 15-17 minutes for regular size muffin cups.
7. Once baked, run a knife around the edges to easily release the muffins.
