Ingredients
– 1 cup all-purpose flour
– 1/2 cup unsalted butter, softened
– 1/4 cup granulated sugar
– 1/4 teaspoon salt
Filling:
– 2 cups fresh or frozen cranberries
– 1/2 cup granulated sugar
– 1/4 cup water
– 1 tablespoon cornstarch
– 1 teaspoon vanilla extract
Topping:
– 1/2 cup chopped walnuts
– 1/4 cup packed light brown sugar
– 1/4 cup all-purpose flour
– 3 tablespoons unsalted butter, melted
Instructions
1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
2. To prepare the crust, mix together flour, butter, granulated sugar, and salt. Press the mixture into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden.
3. In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until cranberries start to soften. Stir in cornstarch and cook until thickened. Remove from heat and stir in vanilla extract.
4. For the topping, mix walnuts, brown sugar, flour, and melted butter until crumbly.
5. Pour the cranberry mixture over the pre-baked crust. Spread evenly.
6. Sprinkle the walnut topping over the cranberry layer.
7. Return to the oven and bake for an additional 25-30 minutes until the topping is golden brown.
8. Allow the bars to cool completely in the pan before cutting into squares.
