Ingredients
– 4 cups shredded turkey tenderloin
– 4 cups cornbread or other cubed dried bread
– 1 cup chopped celery
– 1 cup chopped onion
– 1 can cream of onion soup
– 2 cups chicken broth, divided
– 2 tablespoons butter
– 1 teaspoon poultry seasoning
– 1 teaspoon dried sage
– Salt and pepper to taste
For the Gravy:
– 1/4 cup unsalted butter
– 2 cups chicken broth
– 1/4 cup heavy cream
– 1/4 cup flour
– Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F. In a skillet over medium-high heat, melt the butter.
2. Add the onions and celery to the skillet and sauté until the vegetables are softened.
3. In a large mixing bowl, combine the cornbread, shredded turkey, sautéed vegetables, sage, poultry seasoning, cream of onion soup, and 1 cup of chicken broth. Stir thoroughly to combine.
4. Grease a 9×13-inch baking dish and transfer the mixture into the dish, spreading it evenly.
5. Bake the casserole in the preheated oven for 45 minutes, or until heated through and slightly golden on top.
6. To prepare the gravy, melt butter in a skillet and slowly whisk in the flour. Cook until it starts to lightly brown.
7. Gradually whisk in the remaining chicken broth. Add salt and pepper to taste, and continue simmering until the gravy thickens.
8. Stir in the heavy cream and let it simmer for another 5 to 10 minutes.
9. Pour the prepared gravy over the baked casserole and serve. Garnish with parsley or chopped green onions for added color and flavor.
