Ingredients
For the Crust:
– 2 1/3 cups all-purpose flour
– 1/4 teaspoon baking powder
– 12 tablespoons unsalted butter, melted and cooled
For the Lemon Filling:
– 1 14 oz can sweetened condensed milk
– 1/3 cup fresh lemon juice
– Zest of 2 lemons
– 2 tablespoons poppy seeds
Instructions
1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
2. In a large bowl, mix together flour and baking powder. Drizzle the melted butter over the dry ingredients and mix until a crumbly dough forms.
3. Reserve 1 cup of the crumb mixture for topping and press the rest into the bottom of the prepared baking dish to form the crust.
4. In a separate bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and poppy seeds until well combined.
5. Pour the lemon filling over the crust and spread it evenly.
6. Sprinkle the reserved crumb mixture over the lemon filling.
7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is set.
8. Allow the bars to cool in the baking dish before cutting into squares.
