Ingredients
Ingredients:
– 1 pound chicken tenderloin
– 1 cup long-grain white rice
– 4 cups beef broth
– 1 cup shredded Gruyère cheese (optional, for serving)
– 2 tablespoons butter
– 2 tablespoons olive oil
– 3 large onions, thinly sliced
– 1 teaspoon sugar
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon dried thyme
– Fresh thyme leaves for garnish (optional)
Instructions
1. In a large skillet, melt butter with olive oil over medium heat.
2. Add sliced onions and sprinkle with sugar, salt, pepper, and dried thyme. Cook, stirring occasionally, until onions are caramelized and golden brown, about 30-40 minutes.
3. Season chicken tenderloin with salt and pepper, then add to the skillet with the onions. Sear each side until golden brown.
4. Add rice to the skillet and stir to coat with the caramelized onions and chicken juices.
5. Pour in beef broth and bring to a boil.
6. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender, the liquid is absorbed, and chicken is cooked through.
7. Fluff rice with a fork and adjust seasoning if needed.
8. Serve hot, topped with shredded Gruyère cheese and fresh thyme leaves if desired.
