Ingredients
4 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1 bay leaf
4 cups beef broth
1 cup chicken broth
1/2 cup dry white wine (optional)
Salt and pepper to taste
4 small round bread loaves (hollowed out)
1 1/2 cups shredded Gruyère cheese
Instructions
In a large pot, melt the butter with olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.
Stir in the minced garlic, thyme, and bay leaf. Cook for another minute to release the flavors.
Pour in the beef broth, chicken broth, and wine if using. Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes. Season with salt and pepper to taste.
Preheat your oven broiler. Place the hollowed-out bread loaves on a baking sheet.
Ladle the soup into the bread bowls. Top each with a generous sprinkle of shredded Gruyère cheese.
Broil for 2-3 minutes until the cheese is melted and bubbly.
