Ingredients

– 1 lb chicken tenderloin, sliced

– 1/4 red onion, thinly sliced
– 4 cups mixed greens such as arugula, spinach, or romaine
– 1/2 cup corn kernels, fresh, canned, or thawed frozen
– 1 tbsp olive oil for cooking the chicken
– Salt and pepper, to taste
– Red pepper flakes optional, for a bit of spice

For the Dressing:
– 2 tbsp fresh lime juice
– 3 tbsp olive oil
– 1 clove garlic, minced
– 1 tsp honey or agave syrup optional, for sweetness
– Salt and pepper, to taste


Instructions

Cook the Chicken:
1. In a bowl, toss the chicken tenderloin with olive oil, salt, pepper, and red pepper flakes if using.
2. Heat a skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on each side, or until the chicken is golden brown and fully cooked. Remove from heat and set aside.

Prepare the Salad:
1. Dice the avocados and cucumber.
2. Halve the cherry tomatoes.
3. Thinly slice the red onion.
4. If using fresh corn, quickly blanch it in boiling water for 1-2 minutes, then cool under cold water.

Make the Dressing:
1. In a small bowl, whisk together fresh lime juice, olive oil, minced garlic, honey or agave syrup if using, salt, and pepper until well combined.

Assemble the Salad:
1. In a large salad bowl, combine the mixed greens, diced avocado, cherry tomatoes, cucumber, red onion, and corn kernels.
2. Add the cooked chicken tenderloin slices on top.

Dress the Salad:
