Ingredients
2 cups cooked chicken tenderloin, diced grilled or roasted
1 avocado, diced
1 cucumber, sliced
1 cup cherry tomatoes, halved
1/2 cup corn kernels fresh, canned, or thawed frozen
1/4 red onion, thinly sliced
2 cups romaine lettuce or mixed greens, chopped
Fresh dill or parsley, chopped for garnish
For the Healthy Ranch Dressing:
1/2 cup Greek yogurt
1/4 cup buttermilk or more Greek yogurt
1 clove garlic, minced
1 tbsp fresh lemon juice
1 tbsp fresh dill, chopped
1 tbsp fresh parsley, chopped
Salt and pepper, to taste
Instructions
Cook the Chicken: If not already cooked, season the tenderloin with salt, pepper, and your choice of spices. Grill or roast until fully cooked. Let it cool, then dice into bite-sized pieces.
Prepare the Vegetables: Slice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Dice the avocado and chop the lettuce or mixed greens.
Make the Healthy Ranch Dressing: In a small bowl, whisk together the Greek yogurt, buttermilk, minced garlic, lemon juice, fresh dill, and parsley. Season with salt and pepper to taste. Adjust the consistency with more buttermilk if desired.
