Ingredients
– 1 large seedless watermelon
– 1 pint blueberries
– 1 pint strawberries, hulled and sliced
– 1 pint raspberries
– 2-3 large oranges
– 1 small cantaloupe
– Fresh mint leaves for garnish (optional)
– Star-shaped cookie cutters in various sizes
Instructions
1. Prepare the Watermelon:
– Slice off the top and bottom of the watermelon to create flat surfaces.
– Stand the watermelon upright and carefully trim the rind off, leaving a smooth, round watermelon “cake.”
– For a taller cake, optionally cut the watermelon horizontally to create two layers and stack them.
2. Cut the Stars:
– Slice the oranges into 1/4-inch thick rounds.
– Use star-shaped cookie cutters to cut out star shapes from the orange slices.
– Also slice the cantaloupe thickly and use the cutters to create melon star shapes for added variety.
3. Decorate the Watermelon Cake:
– Place the watermelon “cake” on a serving platter.
– Secure the star-shaped orange and cantaloupe slices on the sides of the watermelon with toothpicks, if needed.
– Create a decorative pattern by alternating blueberries, raspberries, and sliced strawberries around the base or top of the watermelon.
– Scatter any remaining berries on top for extra color and allure.
4. Garnish:
– Decorate with fresh mint leaves around the base and on top for a burst of freshness.
5. Serve:
– Chill the cake in the refrigerator for 15-30 minutes before serving to ensure it’s refreshing and cool.
– Slice and enjoy this bright Citrus Splash Fruit Cake, a delightful centerpiece for any occasion!
