Ingredients

For the Dressing:
– 2 tbsp fresh lime juice
– 3 tbsp olive oil
– 1 clove garlic, minced
– 1 tsp honey or Dijon mustard (optional, for added flavor)

Instructions
Prepare the Turkey:
– Cook the Turkey: If not already cooked, season the turkey tenderloin with salt, pepper, and your favorite spices. Grill, bake, or poach the turkey until fully cooked. Let it cool slightly, then shred or dice it into bite-sized pieces.
Prepare the Salad:
– Prepare the Vegetables: Dice the avocados and immediately toss them with 1 tbsp of lime juice to prevent browning. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. If using fresh corn, you can quickly blanch it in boiling water for 1-2 minutes, then cool it under cold water.
