Ingredients

– 2 ripe avocados, halved and pitted
– 4 large eggs
– 1/2 cup mushrooms, finely chopped (button, cremini, or your choice)
– 1 tbsp olive oil or butter
– Salt and pepper, to taste
– Red pepper flakes optional, for spice
– 1/4 cup shredded cheese optional, cheddar or mozzarella
– Fresh herbs, such as parsley or chives, for garnish
– 2 large tortillas or wraps
– 4 slices turkey tenderloin (thinly sliced)


Instructions

1. Preheat the Oven: Preheat your oven to 400F (200C).

2. Prepare the Avocados: Cut the avocados in half and remove the pit. Scoop out a small amount of the flesh around the hole where the pit was to create enough space for the egg.

3. Cook the Mushrooms: In a small skillet, heat the olive oil or butter over medium heat. Add the chopped mushrooms and cook for about 5 minutes, until softened and browned. Season with salt and pepper.

4. Assemble the Avocados: Place the avocado halves in a baking dish. Stabilize them if necessary by trimming a tiny bit off the bottom. Spoon some of the cooked mushrooms into each avocado half.

5. Add the Eggs: Carefully crack an egg into each avocado half, letting the yolk settle in the center and the whites fill the surrounding space.

6. Bake the Avocados: Place the baking dish in the oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny. For firmer yolks, bake an additional 2-3 minutes.

7. Optional Cheese: If using cheese, sprinkle it over the eggs in the last 5 minutes of baking to allow it to melt.

8. Create the Wrap: Remove the avocados from the oven and let cool slightly. Place a slice of turkey tenderloin on each tortilla or wrap, scoop the baked avocado and mushroom mix over the tenderloin, then fold and roll the wrap.

9. Garnish and Serve: Sprinkle the wraps with red pepper flakes, fresh herbs, and any additional seasoning you prefer. Serve immediately.
