– 1/4 red onion, finely chopped
– 2 cups mixed greens such as spinach, arugula, or romaine
– 1/2 cup corn kernels (fresh, canned, or thawed frozen)
– 1 tbsp fresh lime juice (to prevent avocado browning)
– Salt and pepper, to taste

For the Dressing:
– 2 tbsp fresh lime juice
– 3 tbsp olive oil
– 1 clove garlic, minced
– 1 tsp honey or Dijon mustard (optional, for added flavor)
– Salt and pepper, to taste


Instructions

1. Prepare the Chicken:
– If the chicken tenderloin is not already cooked, season it with salt, pepper, and preferred spices, then grill, bake, or poach until fully cooked. Let it cool slightly, then shred or dice into bite-sized pieces.

2. Prepare the Vegetables:
– Dice the avocados and immediately toss them with 1 tbsp of lime juice to prevent browning.
– Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
– If using fresh corn, blanch in boiling water for 1-2 minutes, then cool under cold water.

3. Make the Dressing:
– In a small bowl, whisk together the fresh lime juice, olive oil, minced garlic, and honey or Dijon mustard (if using), then season with salt and pepper until well combined.

4. Assemble the Salad:
– In a large salad bowl, combine the mixed greens, shredded chicken tenderloin, diced avocado, cherry tomatoes, cucumber, red onion, and corn kernels.

5. Dress the Salad:
