Ingredients

– 2 medium beets, peeled and diced
– 3 large carrots, peeled and sliced
– 2 tablespoons olive oil
– 2 chicken tenderloins
– 3 tablespoons honey
– 1 tablespoon soy sauce
– 1 teaspoon garlic powder
– Salt and pepper to taste
– 1 ball of burrata cheese
– Fresh basil leaves for garnish


Instructions

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a bowl, toss the diced beets and sliced carrots with olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet. Roast in the oven for 25-30 minutes or until tender and slightly caramelized.
3. While the vegetables are roasting, season the chicken tenderloins with garlic powder, salt, and pepper.
4. In a small bowl, mix the honey and soy sauce. Heat a skillet over medium heat and cook the chicken tenderloins until golden brown and cooked through, about 4-5 minutes per side. In the last minute of cooking, pour the honey-soy mixture over the chicken and let it glaze, turning frequently.
5. To serve, place the roasted vegetables on a platter. Tear the burrata cheese over the top and lay the glazed chicken tenderloins alongside. Garnish with fresh basil leaves.
