Ingredients
For the Grilled Chicken:
1 pound chicken tenderloin strips
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder

For the Citrus Herb Dressing:
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon honey
1 tablespoon Dijon mustard
1 tablespoon chopped fresh dill
Salt and pepper, to taste
For the Bowls:
2 cups cooked quinoa
1 red bell pepper, sliced
1 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 cup crumbled feta cheese
Fresh mint or parsley, chopped for garnish
Instructions
Grill the Chicken: Preheat the grill to medium-high heat. Toss chicken tenderloin strips with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill for 5-6 minutes on each side until cooked through and slightly charred. Remove from the grill and let rest.
Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, and chopped dill. Season with salt and pepper.
