Ingredients
1 cup all-purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup milk
1/3 cup pumpkin puree
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
Butter for cooking
Maple syrup or your favorite syrup, for serving
Instructions
In a mixing bowl, combine flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
In another bowl, whisk together milk, pumpkin puree, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should be slightly lumpy.
Heat a non-stick skillet or griddle over medium heat and lightly butter the surface.
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Serve warm with maple syrup or your favorite syrup.
