Ingredients
1 pre-made pie crust
1 cup ricotta cheese
2 cups fresh mushrooms, sliced
3 large eggs
1/2 cup heavy cream
1/2 cup grated Gruyere cheese
Salt and pepper, to taste
1 tablespoon fresh thyme, chopped
Instructions
Preheat your oven to 375°F (190°C).
In a skillet, sauté the mushrooms until golden brown and any released moisture has evaporated. Allow to cool slightly.
In a bowl, whisk together the eggs, ricotta cheese, heavy cream, Gruyere cheese, salt, pepper, and fresh thyme.
Fold in the sautéed mushrooms.
Pour the mixture into the pre-made pie crust and spread evenly.
Bake for 35-40 minutes, or until the quiche is set and the top is golden brown.
Let it cool for a few minutes before slicing and serving.
