1 cup pumpkin puree
1/2 cup vegetable oil
3/4 cup sugar
1/2 cup brown sugar
1/4 cup pure maple syrup
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1/4 cup sugar for topping
1 tablespoon cinnamon for topping


Instructions

Preheat your oven to 350F (175C) and grease a loaf pan.
In a large mixing bowl, combine the pumpkin puree, vegetable oil, sugar, brown sugar, maple syrup, eggs, and vanilla extract, stirring until smooth and well-mixed.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and cream of tartar.
Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
Pour the batter into the greased loaf pan.
Mix the topping sugar with cinnamon and sprinkle generously over the batter.
Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing.
