Ingredients
8 oz mushrooms, sliced
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon fresh thyme leaves
Salt and pepper, to taste
1 cup fresh spinach, chopped
1/2 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
4 slices of crusty bread like baguette or ciabatta
Fresh parsley, chopped for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes.
Add the minced garlic and thyme to the skillet. Sauté for another 2 minutes until fragrant. Season with salt and pepper to taste.
Stir in the fresh spinach and cook until wilted, about 2 minutes. Pour in the heavy cream and cook for another 2 minutes, allowing the mixture to thicken slightly.
Place the bread slices on a baking sheet. Toast in the preheated oven for about 5 minutes until slightly crispy.
Remove the bread from the oven and top each slice with the creamy spinach and mushroom mixture.
Sprinkle the mozzarella and Parmesan cheeses generously over the mixture-covered bread.
Return to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and golden.
Remove from the oven, garnish with chopped parsley, and serve warm.
