Ingredients
1/2 lb chicken tenderloin, cut into chunks
1/2 lb chorizo, sliced
2 medium sweet potatoes, cubed
1 bunch asparagus, trimmed and cut into thirds
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon smoked paprika
Salt and pepper to taste
1 lemon, sliced
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 400F (200C) or preheat your grill to medium-high heat.
In a large bowl, combine the chicken tenderloin, chorizo, sweet potatoes, and asparagus. Drizzle with olive oil and add the minced garlic, smoked paprika, salt, and pepper. Toss to coat everything evenly.
Tear off 4 large sheets of heavy-duty aluminum foil, each about 12×12 inches. Divide the chicken mixture evenly among the foil sheets. Place a lemon slice on top of each packet.
Fold the sides of the foil up over the ingredients, sealing the packets tightly.
Place the foil packets on a baking sheet if using the oven or directly on the grill grates. Cook for 25-30 minutes in the oven or 20-25 minutes on the grill, or until the sweet potatoes are tender and the chicken is cooked through.
Carefully open the foil packs, being cautious of the steam. Garnish with fresh cilantro if desired, and serve hot with extra lemon wedges on the side.
