Ingredients
1 pound bacon, cooked and crumbled
4 large eggs
2 cups frozen hash browns, thawed
1 cup shredded mozzarella cheese
1/2 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Optional: chopped fresh parsley for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the bacon until crisp. Drain on paper towels and crumble when cool.
In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper. Stir in the thawed hash browns and crumbled bacon.
Mix in 3/4 cup of shredded mozzarella cheese into the egg mixture, reserving 1/4 cup for the topping.
Lightly grease a 9×13 inch baking dish and pour the mixture into it, spreading evenly.
Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
Remove from the oven and sprinkle the reserved mozzarella cheese on top. Let cool slightly before serving.
Optional: Top with chopped fresh parsley for added freshness and color.
