Ingredients
1 small pineapple, peeled, cored, and sliced
1 cup blackberries
3 tbsp maple syrup
2 tbsp extra virgin olive oil, divided
2 tbsp agave syrup, divided
1 log goat cheese
to 1 tsp crushed red pepper
4 to 5 sprigs fresh mint
Artisan bread, sliced and toasted
Instructions
Preheat oven to 425°F (220°C).
Toss pineapple, blackberries, maple syrup, 2 tbsp olive oil, and half the agave syrup in a baking dish. Roast for 10 minutes.
Add goat cheese to the center, drizzle remaining olive oil and agave syrup, sprinkle with crushed red pepper, and add mint leaves. Roast for another 15 minutes until everything is caramelized and the cheese is warm.
Broil the goat cheese until lightly golden. Serve with toasted artisan bread for a delightful treat.
